Slow tomatoes

Ripe tomatoes + salt + pepper + olive oil

 

Cooking away, slowly but surely, at 150 degrees for 3 - 5 hours

 

A little too long! Most of it was still delicious

Oven dried tomatoes, baked really slowly for a really long time, are amazing in so many ways. Easiest way: chop up and toss with parmesan and olive oil on some cooked pasta. Buon appetito!
